Defense is self-evident as to why it's good. Dueling is pretty good if you have a DM who's strict on Arcane Focuses with EK. Great Weapon Fighting in general is pretty nice. I'd keep away from Archery cause you have cantrips, Two-Weapon Fighting cause of War Magic (the level 7 ability), and Protection because it's poo poo garbage.

6 Swords Bard / 4 Thief Rogue / 2 Fighter is better than 6 Bard / 6 Thief imo. Dueling still works without shield. Poke with your rapier, still adds +2 damage. Play almost like a swashbuckler, get two into rogue for cunning action, go in and poke some, then bonus action disengage. You can also just respec at withers.
