A dex build is really lame until you reach the higher levels. I recommend a dex/int build. You'll end up a spellsword. Lothric Knight sword is very good. Estoc isn't as good as it used to be bit it's still decent. Pontiff curved sword is really good and doesn't need infusion. It's an absolutely top tier weapon on a quality build. If you know how to keep on your opponent while rollcatching and punish literally everything they do, then yes.
